
Slovenian restaurants awarded Michelin stars
Nine Slovenian restaurants have won Michelin stars by the famous French restaurant guide this year, one fewer than last year. Run by star chef Ana Roš, Hiša Franko has retained three stars and restaurant Milka with chef David Žefran has kept its two, while another seven won one each, CE Report quotes The Slovenia Times.
"One of only 153 restaurants in the world to be awarded three Michelin stars, Hiša Franko is also the 37th to boast three Michelin red stars and a Michelin green star at the same time," the Slovenian Tourist Board said.
Of the three-star Kobarid restaurant the Michelin Guide says that "each course is a true discovery, in which local and Slovenian ingredients and traditions are skilfully combined with influences from elsewhere in the world with grace, good taste and the chef's own inimitable style".
The restaurants that have kept one Michelin star include COB in Portorož, which serves the creations of Filip Matjaž, the Radovljica establishment Hiša Linhart with chef Uroš Štefelin, Gregor Vračko's Hiša Denk in Zgornja Kungota, and the Horjul restaurant Grič with the chef Luka Košir.
Also retaining their one star are Dam in Nova Gorica where Uroš Fakuč is the chef, Vipava's Gostilna Pri Lojzetu with Tomaž Kavčič, and Pavus, the restaurant at Laško Castle headed by chef Marko Pavčnik.
The Slovenia Michelin Guide 2025 includes 72 restaurants, nine more than last year.
This year the guide awarded Young Chef Award, Service Award and Sommelier Award for the first time in Slovenia. The Young Chef Award went to Filip Matjaž from COB, the Sommelier Award went to Anže Kristan from Gostilna pri Lojzetu, and the Service Award went to Jan Sinčič of the Koper fish restaurant Salicornia.
Nine restaurants earned the green star for sustainability, as the restaurant of Plesnik Hotel with the chefs Janez Bratovž and Tom Čopar was added to the list of last year's winners.
The other green-starred restaurants are Galerija okusov, Gostilna Krištof, Gostilna Repovž, Grič, Hiša Franko, Hiša Linhart, Gostilna Mahorčič and Špacapanova hiša.
Slovenian restaurants have been listed in the Michelin Guide for the sixth year in a row and the number of the establishments included has increased by almost 40% since the first Slovenian edition.
